Meng Menu

I realized the other day that I hadn't posted a Meng Menu since APRIL!!! What??? I plan a menu every two weeks but I am terrible at blogging about them. So, I'm taking 3 minutes to post our menu this week. Enjoy! There probably won't be another Meng Menu post until...uh....December? (just kidding...)

I saved $108 with Kroger savings and coupons today. That being said, I spend...ahem...$287 in total. I feel like either grocery prices are going up or my family is eating more. Probably both.

I feel like my life has been all out of whack for the past 2-3 weeks. We had spring break, then an unexpected week trip to Florida for a family funeral. We just got back last Tuesday evening and then my brother came to stay for the weekend. Whew! Busy and fun but I am ready for some sense of normalcy. 

Menu planning helps me return to "normal" (whatever that is!). As much mental effort and energy planning and shopping for two weeks takes, I am so relieved to have a plan in place for our dinner plans for the next two weeks.

How to Start Planning a Weekly Dinner Menu

Dinnertime can be the worst, right? The kids are clawing at your leg, begging for goldfish, your husband is asking "what's for dinner?", and you are stressed out of your mind, wondering what you can throw together with half a box of spaghetti, a block of cream cheese, and some broccoli that is headed south. Pizza...? Wait, we did that last night...Sigh. 
I hate not having a plan for dinner so I try to make Menu Planning a regular part of my life. It doesn't completely reduce the "Witching Hour" woes, but I have discovered 6 ways that Menu Planning makes my life easier.

1. Menu planning makes dinnertime less stressful. At our house, the 1-2 hours before dinner are a low point in my day. Everyone is hungry and sleepy and I tend to get crabby (coffee, anyone?). Having a plan for dinner helps me have a happier evening with my family.

2. Menu planning reduces trips to the grocery store. I hate going to the grocery store every two days (or every day...) to pick up something that I forgot. It wastes so much time; plus shopping with kids? No thanks. By planning a weekly menu, I usually have everything on hand to make dinner (let's face it...I forget something on my list each week!).

3. Menu planning helps me save money. The weeks when I "wing it" at the store, I always spend too much money. Instead of buying groceries that I know we are out of, and mentally counting up dinners in my head (Monday: chicken, Tuesday: hamburger, Wednesday: pork chops...), when I grocery shop from my menu, it helps me stay on budget and avoid impulse spending or the inevitable daily trip to the store because I forgot something.

4. Menu planning helps me be healthier. I like to cook healthy meals for my family. When I menu plan, I am more likely to serve vegetables, fruits, and leans meats for dinner.

5. Menu planning reduces eating out. Oh, this is the downfall of me and my husband. "You wanna grab McDonalds while we're out?" "Sure." And the kids are happy because...happy meal, right? But while the kids may be happy, our budget isn't. When I know I have planned for pork loin, potatoes and green beans that evening, it is a lot easier to say no to the draw of the drive-through.

6. Menu planning helps me get creative in the kitchen. It is easy to get into a dinner rut, eating the same things over again over again. When I plan a weekly menu, I am more likely to try a new recipe, instead of relying on the ol' standbys. Pintrest is my best friend.

So, maybe you want to try your hand at weekly menu planning but don't know where to start.
Here are 6 simple steps to help you reap the benefits listed above!


Step One: Look at your week. Menu planning isn't just about food; it's about making your life easier. Soccer practice on Wednesday night? Crockpot meal.
Potluck at church on Sunday? Great! Cookies it is!
I like to plan simple meals, like sandwiches, on busy nights. In our family, we also plan to eat out every Friday night. Planning our restaurant eating allows us to indulge in the luxury of eating out without feeling guilty... and it gives me a break from cooking too. Win, Win.

I always menu plan on Sunday, but the key is to pick a day to plan and shop that helps you feel the most prepared to tackle the week ahead--maybe Saturday or Monday is the best day for you! 

Step Two: Look in your pantry. Or freezer. Take stock of what you already have on hand (tons of pasta? Spaghetti night this week!) before you plan your meals.

Step Three: What's on sale? Perusing ads, paper on online, is a major way to save money because you can plan your menu around what's on sale. For example, if chicken breasts are 99c a pound, I will plan 3 meals with chicken: Hellman's Chicken, Chicken Broccoli Alfredo, and Creamy Chicken Noodle Soup. I go to kroger.com each week before I shop.

Step Four: Click or Clip Coupons. This is another way you can save money. Since I am a frequent Kroger customer, the store often sends me coupons in the mail. I can also load coupons to my Kroger Card from their website. Using coupons to save money is up to you. Sometimes I use a lot of coupons, other times only a few. I want coupons to save me money as well as time so I am not one to scour the internet for obscure coupon deals. Make your coupons work for you!

Step Five: Plan Your Meals. This step often feels like the hardest one, especially if you are just starting to cook on a regular basis.  Here are some tips to help plan a successful menu:

Start small: If cooking for the whole week feels overwhelming, plan for 3-4 meals (and work up to 6 or 7!) and get pizza or take out on the other nights. The key is to have a PLAN!
Utilize cooking resources: Pintrest is a great resource. I also like allrecipes.com--it's like an online cookbook. For simple, easy meals that use convenient ingredients, try kraftrecipes.com. Or, dig into a paper cookbook, or ask your mom or grandma for family recipes!
Plan a theme night: Make Tuesday sandwich night each week or eat "Brinner" (breakfast for dinner) each Saturday. Themes can help you fill in the blank spots on your menu more easily.
Keep your families tastes in mind: Maybe your kids love pasta so plan a regular spaghetti dinner. (Then sneak some extra veggies into the jar of sauce). There is nothing better than hearing your kids say "Yes! This is my favorite dinner."(rather than, "YUCK! Why do you always make food I hate?")
Try something new: Maybe you've always wanted to learn how to make potstickers, or lasagna, or...whatever! Plan a new meal into your menu. Trying new recipes keeps cooking fun.

Step Six: Go Shopping. Once you plan your meals, make your grocery list and go shopping (don't forget to list items for breakfast, lunch, and snacks!). I like to go to Kroger on Sunday afternoons so I can shop sans kids.

Once your shopping is done, pat yourself on the back, breathe a sigh of relief, and put your weekly menu on the fridge. That way you can simply point when you hear that daily question, "What's for dinner?"

I am FINALLY back into a two week shopping routine. The winter weather we have been having really threw off my schedule. Good budget week too: I spent $233 in total, or $115ish per week. Nice!

I've been winging it lately at the grocery store, mostly because I've been off my usual 2-week-Sunday-Shopping schedule because of all this darn snow we've been having. The bad thing about "winging it" is that becuase I don't plan meals before I go and carefully shop for TWO WEEKS worth of meals, I usually end up spending more money than I want to. Poo poo.

Oh well. Some weeks, or months, are just like that, especially when you get a boatload of snow.

Here's to a March that is free of snow and full of grocery savings!

Meng Menu + What I'm stocking in my freezer for baby-go-time

Tuesday: Sausage and kale soup, rolls
Wednesday:  Chicken, broccoli and rice casserole
Thursday: Dijon pork chops, roasted red potatoes, green beans
Friday: Out to eat
Saturday: Sloppy joes, chips, carrots

Sunday: Spaghetti and meatballs, bread, salad
Monday: Chicken and rice w/ dijon gravy, green beans
Tuesday: Pulled pork sandwiches, chips, carrots
Wednesday: Asian marinated chicken thighs, rice, broccoli
Thursday: Pork loin, stuffing, peas
Friday: Out to eat
Saturday: Spinach-sausage lasagna roll ups, salad, bread 

So, I took my 36 week belly grocery shopping today. I also took one of my 7 year old boys and it was a good thing too because he was a great helper as his mama huffed and puffed up the aisles of Kroger. I seriously was looking for a bench to rest because I was so tired. "So tired" actually doesn't even describe how tired I was. 
 Anyways, it is over. I am alive. I spent $268 which is awesome considering that I am going to double everything that is highlighted above for a freezer meal. 

I am due December 25 and I have been doubling recipes and stocking up on freezer meals for the past 2 weeks or so. I have 5 meals frozen so far. By the end of these two weeks hopefully my freezer will boast of these meals for my family: 

Chili (add rolls)
Cheeseburger Soup (add rolls)
Shepherd's pie
Chicken Pot Pie
Lasagna (add salad)
Asian marinated chicken thighs (add rice and microwave a veggie)
Chicken-Bacon-broccoli Alfredo (I am going to freeze cooked chicken and bacon and pair with a bag of frozen broccoli for a quick just-cook-the-pasta-pour-in-a-jar-of-sauce meal)
Chicken, rice, broccoli casserole
Pulled pork for sandwiches (add chips, apples/carrots. I bought a 7 pound roast today so hopefully we will get 4ish meals out of this roast. 
Spinach-sausage lasagna roll ups (add salad)
Twice baked potatoes (easy side dishes)

So, that's about 10 dinners that I will (hopefully) have in my freezer. We also have friends who have offered to make us dinners, which is great as I really want to take it easy for about a month after baby is born.

I also bought stuff to make (and freeze) breakfast burritos for quick breakfasts for the twins for busy school mornings. And homemade bread....and muffins. 

I am insane.

Nesting is exhausting.

Meng Menu: Recipe for Chicken, Broccoli, and Rice casserole

Sunday: Homemade pizza night, salad,
Monday: Chili, rolls
Tuesday: Sausage and Kale pasta
Wednesday: Egg muffins, hashbrowns, fruit salad
Thursday: Helman’s chicken, Parmesan rice, green beans
Friday: Out to eat
Saturday: Chicken, rice and broccoli casserole (See recipe below!)

Sunday: Potato soup
Monday: London Broil, baked potatoes, green beans
Tuesday: Pork loin, stuffing, peas
Wednesday: Spaghetti, salad
Thursday: Sausage, kale and potato soup, rolls
Friday: Out to eat
Saturday: Fried rice w/ peas, carrots, and pork

Chicken, Broccoli, and Rice Casserole is a real crowd-pleaser. My family loves it; I've made it for company (very comfort-food-esque), and it is my go-to for taking a meal to friends who have had surgery, are going through sickness, had a new baby, etc.

Chicken, Broccoli, and Rice Casserole


2-3 cups of cooked chicken, cubed or shredded (depending on how many people you are serving)
2-3 cups cooked rice (2 cups, serves 6-8. 3 cups 8-10)
1 can cream of chicken soup
Milk
1/3-1/2 cup sour cream
onion power
pepper
garlic powder
Smoked paprika (if you have it!)
Two cups lightly steamed broccoli florets (I used a bag of frozen, steamed in the microwave, or cut up a head of broccoli and steam it in the microwave for about 3-4 min).
1-2 cups favorite shredded cheese (cheddar, Colby jack, etc).

In a greased 9x13 casserole dish, layer rice, chicken, and broccoli.
Mix soup, 1 and ½ cans of milk, sour cream, and seasonings to taste. Whisk until combined and pour over rice/chicken/broccoli.
Using a spatula, make “pockets” in the rice mixture all over to let the soup mix get down to the bottom. Top with cheese.
Bake at 400 for 20-30 min until bubbly and cheese starts to brown.

Wednesday: Pulled pork sliders for pot luck
Thursday: Chicken Parmesan w/ pasta and salad
Friday: Out to eat
Saturday: Biscuits and Gravy, fruit smoothies

YEA! Grocery shopping is done for another two weeks! And darn it! I forgot the kale so I'm going to have to go back on Thursday. I also need to buy fish for Wednesday; I am going to try a new fish market that I have been wanting to shop at for months. I hope I can find a good deal on salmon! 

But overall, a good week, budget wise: Total = $254 which included diapers, conditioner, body wash, foil, plastic wrap, and disposable bowls, plates, and cups for our Sunday Supper nights. 

Nope, not bad at all!

I always hold my breath a little bit when I hand my Kroger card to the attendant to be swiped at check out. Today, before the swipe, my total was around $360. Yikes!  But after that magical little swipe, $76 rolled off the final tally, bringing the final total to around $280ish (or 140/week). Whew. I bought a lot of groceries today but my total also included:

I was glad to take advantage of Kroger's "buy 5 save $5" deal on 26 items; plus, I saved on other Kroger deals and coupons.

So overall...not bad. Not bad at all.

Whew! School started last week for me and this week for my kids so menu planning is more important than ever for keeping our evenings running smoothly. I spent $268 this week, which is a bit more than normal but I am also hosting dinner at my house each Sunday for college students, so I am preparing meals for about 10 people each week (including my family).

Planning delicious, budget conscious meals for company can be challenging but this past Sunday went really well and I think the dinner turned out great! 

I was able to get a 5+ pound pork loin on sale + coupon for $10. In total for the whole meal, I was able to feed 10 people a company dinner for around $20. Not bad! 

I am looking forward to lasagna next Sunday night--my mom's recipe. A classic indeed!

Whew. I am glad to have grocery shopping over with. Sometimes it seems like such a mental and physical hurdle. But I am prepped and planned for two weeks, which will take us up to the start of school for the twins, August 25. Total today was $247 or $123 per week. Not bad.

I'm finally getting around to posting our menu for the next two weeks! I menu plan every two weeks but I've been forgetting to blog about it. 

I am trying out 3 new recipes in week 1. I've been getting tired of the same ol' same ol' dinners. Hopefully we'll find some new favorites!

Shopping was great this week and came in at $221, or $111 per week. Nice. I saved almost $50 with Kroger specials and a few coupons. Plus, I had an online coupon for double fuel points on weekends so the next time we fill up (which will be soon!) I will be able to save 70c per gallon. YES!

I am really looking forward to the 4th of July--my brother is coming to visit and we are looking forward to cooking out and some fireworks!
